You can melt chocolate one of two ways. One time-tested method is to use either a pan with a bowl on top or a double boiler. This keeps the chocolate out of the water that allows it to melt slowly. The other way to melt chocolate is to use the microwave. The key to this is to use good quality chocolate. In the microwave, you want to do it in small batches of 30 seconds so as not to burn the chocolate. The chocolate will be much easier to melt if you break it up into even sized pieces.
