There are actually two ways to go about melting chocolate. The old-fashioned way is to use a double boiler or can with a bolted on top. This keeps the chocolate out of the water that allows it to melt slowly. The other thing you can do is use a microwave. Good quality chocolate is key for proper melting. In the microwave, you want to do it in small batches of 30 seconds so as not to burn the chocolate. To make it easier to melt, break all the chocolate into even sized, small pieces.
